Attack of the mini doughnuts!

Photos of powdered sugar covered or chocolate dipped rings started showing up on Foodgawker and Tastespotting...the mini doughnut craze was taking over. Little did I know I would be the next victim. They had taken over my thoughts and my cravings. The only way to free myself was to eat them. All of them. So I did.

Take that super delicious mini cakes with holes in them!  You thought you had me, but I showed you who's boss. I beat you up into a batter, tortured you with a little heat, and drowned you in chocolate ganache! And then, like that wasn't enough...I pelted you with sprinkles. The rainbow kind. I enjoyed that and yes I would do it again. Next time, though you'll be dredged in a tub of cinnamon sugar. Muahaha haha haaaa!

Baked mini doughnuts

2 cups all purpose flour
1/2 cup granuated sugar
1 tsp baking powder
2 eggs,beaten
1/2 cup milk
1 tsp vanilla extract
2 Tbs butter

Preheat oven to 350 F. Whisk flour, baking powder and sugar in a bowl.

Beat egg one at a time with milk, butter and vanilla extract until well blended.

Then combine with flour mixture and mix until blended.

(My mom bought me a mini doughnut maker...don't hate!)

Lightly spray doughnut pan with oil. Pour batter into molds up to 2/3 full.

Bake 10 -12 minutes or until tops are golden brown.

Remove from oven and let it cool before ganaching (recipe here) and adding sprinkles.

Or, if chocolate and sprinkles aren't your thing then bring on the powdered sugar!

I never knew there was such a thing as a mini doughnut maker--I'd be very afraid to have one in my kitchen--oh, boy. I wouldn't be able to rely on willpower. They look so good, though...

  8. Yay! Congrats on Top 9!

  9. Lemons, I still can't believe I made top 9! I totally Facebooked about it though, haha.
I had no idea mini doughnut makers existed either (I also had no idea I wanted one) until I saw a few of them on sale at Macy's! But I wouldn't recommend them...they cooked unevenly. Maybe the mini doughnut pans would be better as far as them cooking up more evenly.

Debbie, The Housewife, Croquer à Pleines Dents and Jackie: Thanks so much! The doughnut maker wasn't as great as I thought. Mine cooked unevenly as you can see in the photos (some were over cooked others were undercooked).

Linn, thank you for the kind words :) I'm still practicing with photography and photo editing, but it's a lot of fun.
