Fried Macaroni and Cheese Balls



The majority of the meals I make are my efforts to disguise leftovers so Mr. Incredible will eat them without complaint. Last night's macaroni and cheese was reincarnated this morning into breaded, fried mac and cheese balls, which Mr. Incredible gobbled up happily. Can I get an Amen?!

He has already requested the next time I make them to incorporate bacon and jalapeno. He's definitely my soul mate :)




Fried Macaroni and Cheese Balls


Ingredients:

Vegetable oil, for frying
2 cups macaroni and cheese, chilled in the refrigerator overnight, and formed into 1-1.5 inch balls
3/4 c flour, for dredging
2 eggs, beaten
2 cups panko bread crumbs, for dredging

Directions:

Heat 2 inches of oil in a large, heavy pan to 350 degrees F.

Dredge each macaroni ball in flour, then egg, and then bread crumbs to coat.


Repeat dredging balls  into the egg and bread crumbs for a total of 2 coats. Fry for about 1 minute on each side until golden brown. Drain on paper towels before serving.
